However, sometimes it can be so hard to think of what to prepare the night before. I often take leftovers and I also make massive stews that I freeze and then use up throughout the month. For other days, something really simple and tasty like this bowl is the kind of thing I like. Easy, quick and healthy, with a big emphasis on easy.
1 medium sweet potato
Half a head of broccoli
Half a small red onion
A handful of walnuts, chopped
A sprinkle of chilli flakes
1. Set your oven to 200C
2. Dice the sweet potatoes (I wash them and leave the skin on) and chop the red onion finely. Put in an oven dish, drizzle with olive oil and roast for 20 minutes.
3. Cut the broccoli florets and add to the rest. Turn the temperature up to 250C and cook for a further 10 minutes.
4. Serve on a plate or put it in a container, sprinkle the walnut pieces and chilli.
