Spinach and avocado smoothie for hangovers

Today's post is completely a last minute thing. Earlier this week I asked my friends on Sunshine & Glow's Facebook page what I should write about, and the consensus was quick lunches to take to work. I had every intention to look for some interesting recipes that were quick to prepare and good for taking to the office, but then it was my birthday yesterday and I wanted it to be a nice relaxing time instead of being busy writing a post. I celebrated it last night and had a few glasses of prosecco and well, let's say that I have been feeling a bit delicate today!

I had made peace with the thought of taking a break this weekend, when I suddenly thought I could share the recipe of the green smoothie I have pretty much every time I feel a bit hungover. Whenever I feel under the weather I love eating something really fresh and healthy, as it makes me feel like I am doing something good for my body.

Perfect autumn porridge



After six weeks I'm finally going back to work tomorrow. I hadn't had such a long break since I finished university too many years ago, so there is no wonder that I am a bundle of nerves. I am excited and looking forward to seeing everyone and to get stuck in work (I have really missed it!), but at the same time I have that feeling you used to get the night before going back to school after a long summer.

This week will be a test of how well I am, and I want to give myself the best chance to be full of energy, so I've been playing with different breakfasts that will keep releasing energy throughout the morning. As the weather has been getting colder this past week, I thought I would make porridge this morning and make it an autumn one.

Pineapple smoothie bowl recipe

I've always liked smoothies, but over the past 6 months I've gone from always making banana with oats and chocolate to having a Pinterest board dedicated to them and mostly making them up depending on what's too ripe in the fruit bowl.

They make a great breakfast, whether you're on the go and need something to take with you, or if you're feeling a bit worse for wear after a night out.

My latest concoction is this delicious pineapple smoothie bowl. Pineapple is a super fruit packed full of vitamins. It contains vitamin C, which is an antioxidant and boosts our immune system. It also contains vitamin A. For the body conscious, it is known to avoid fluid retention and therefore contributing to a less bloated, flatter stomach.

Home made granola



Breakfast is my favourite meal of the day. To honour my Spanish heritage, I love my sleep and can be a slow starter in the mornings. It isn’t until I have some food in my body that I start to wake up and function half normally.
I also like variety and switch between sweet and savoury. If I remember to do some prep the night before (ie. Put some buckwheat to soak), Deliciously Ella’s Raw Buckwheat Porridge with blueberries tastes a million times better than it sounds. If I’m in a hurry, quite often it’s avocado on toast or granola.

My favourite green smoothies

I have a friend at work who brings smoothies into the office every day. If you have a meeting with her in the morning, she will invariably be carrying her see through cup around.  I remember one particular day when I was looking at the dark green liquid in it thinking it looked disgusting. She assured me that it was delicious, that the banana in it made it very sweet and yummy, and when I still looked unconvinced, she said: "Try it. Have a go". And she was absolutely right, it was delicious! That was the moment when I was converted. It's not that I started drinking them every day, but I started experimenting.

A few months ago I went to Snowdonia with a group of friends for the weekend. We are all from the Mediterranean, so our food heritage is something we can make the centre of our get togethers, and this weekend was no exception. We had some really delicious food, including raclette one evening. I LOVE cheese, but it makes me feel very heavy and sluggish, and so, what was my surprise when the next day I woke up really craving a glass of green smoothie.
